Mexican Monk Brewhouse Opens 1,400-SF Taproom Next to Horchateria Rio Luna in Paramount

Independent craft brewer Ray Ricky Rivera and partners open Mexican Monk Brewhouse, a 1,400-square-foot Latino-owned taproom in Paramount.

Mexican Monk Brewhouse has officially opened in Paramount, marking the city's first independent Latino-owned craft beer taproom. Located at 15950 Paramount Blvd., the 1,400-square-foot venue is a collaboration between craft brewer Ray Ricky Rivera and Horchateria Rio Luna operators David and Ashley Vazquez. The space features a custom mural, reclaimed architectural design elements, and a curated menu of house-brewed beers and Latino-inspired food pairings.

The project represents a five-year effort by Rivera to establish a permanent home for his brewing concept, which previously operated as the contract brewery Norwalk Brewhouse. By utilizing an underused room adjoining the existing Horchateria Rio Luna cafe, the partners aim to provide an anchor business for the local community. The taproom is currently in its soft-opening phase.
