Hotel Maverick, a 60-room boutique property located on the Colorado Mesa University campus in Grand Junction, represents a shift in Colorado’s hospitality landscape. Completed in 2020, the hotel operates as a teaching facility for the university’s hospitality program, allowing students to gain hands-on experience in culinary arts, guest services, and operations. The development is integrated into the university’s geothermal “Geo-Loop” system for heating and cooling and includes infrastructure for electric vehicle charging to support sustainable tourism.
Designed by Davis Partnership Architects, the property features a aesthetic reflective of the high-desert landscape, with amenities including the rooftop restaurant Devil’s Kitchen and Betty’s Gourmet Coffee. By focusing on experiential travel and local integration, the project provides a regional alternative to traditional alpine resort developments in the state.
